Shaken, Not Soaked

The case for dry brining is straightforward: half the work, easily as good a result as soaking your bird in a wet brine.  But we’d like to make it even easier for you this Thanksgiving.  MÁGICO Sofrito Spice is a pre-mixed shaker of premium sea salt and all of the same bold sabor used to season our beans and grains—just in dry form.  Here are the basics for a surefire dry brine.

-Rinse turkey inside and out and dry thoroughly. 

-Liberally season with MÁGICO Sofrito Spice, inside and out.  Don’t be shy. 

-Loosely cover the seasoned turkey in foil and refrigerate overnight. 

-Remove from the fridge an hour or two before roasting.

-Drizzle with extra virgin olive oil. 

-Roast.  We find 13 minutes a pound at 350 degrees works well. 

-Let rest for longer than you think. 

-Carve and enjoy.
