The beating heart of Fillo’s is sofrito—aromatic vegetables, herbs, and spices gently cooked in olive oil. It is a labor-intensive and costly way to begin a dish, which is why you rarely see true sofrito beans outside of homes and better restaurants.
We thought that should change. The result: Tender Black Beans finished with Cuban green sofrito; Jumbo Garbanzo Beans finished with Panamanian red sofrito; Creamy Mayocoba Beans finished with Mexican ancho and epazote
